Plusieurs mois de travaux et l’ouverture d’un bistrotbrasserie (en mars 2016) et d’un resto gastronomique (voir Jean Chauvel) en septembre 2016.
La déco est très sobre, très chic aussi bien en rez-de-chaussée (plutôt convivial) qu’en étage, où l’on accède par un escalier d’artiste en forme de vague. Ambiance beaucoup plus cool et confortable sur les banquettes pour déguster du Jean Chauvel toujours aussi étonnant, même dans le registre néo-brasserie, car les saveurs sont vraiment au rendez-vous.
Dès l’amuse-bouche, on retrouve la griffe Chauvel avec le cappuccino de tomate verte et le délicieux crémeux de lentilles.
Et on se promène à table avec les ravioles de Ricotta, émulsion aux herbes fraîches, le saumon mariné maison, œuf carottes et pousses de soja croquantes, l’œuf croustillant et spaghetti de légumes… le Parmentier de lapin confit, le palet croustillant de pied de cochon, le risotto d’ailerons de volaille caramélisés à la réglisse… le colin cuit lentement au four, betteraves et aromates…
