Lily of the Valley, the wellness sanctuary of the Riviera

Lily of the Valley, the wellness sanctuary of the Riviera

By Ema Lynnx

Just minutes from the hustle and bustle of Saint-Tropez, there's a place that seems to deliberately turn its back on the noise of the world. Perched on the unspoiled heights of Gigaro, overlooking the Mediterranean, is the 5-star hotel & spa. Lily of the valley cultivates an original vision of contemporary luxury: that of a lifestyle centered on well-being and reconnecting with oneself. In this place, wellness is not simply a service added to the hotel experience. It forms the very heart of this destination.

Designed by Philippe StarckThe hotel's architecture blends into the landscape with an almost organic gentleness. Suspended above the sea, nestled between pine forest, Provençal light, and Mediterranean vegetation, Lily of the valley appears as a secluded village, conceived more as a refuge than as a traditional palace.

The designer himself mentions “a fantasized Mediterraneaninspired as much by Greek Antiquity as by the voyages of Ulysses. This vision is found everywhere: in the mineral arches bathed in light, the natural materials, the patinated woods, the terraces open to nature and this permanent feeling of blurring between interior and exterior.

But Lily of the Valley's true uniqueness lies in its approach to wellness. Unlike many luxury hotels where the spa remains a peripheral space, here everything seems organized around the balance of body and mind.

Le Shape ClubThis vast wellness area of over 2,000 m² has been designed as a true center for physical and spiritual transformation. Hammams, saunas, snow shower, cryotherapy, treatment and massage rooms, a 25-meter heated pool, recovery areas and sports studios make up an environment designed to slow down, breathe and find a form of inner alignment.

The experience goes far beyond the usual conventions of a hotel spa. Naturopaths, nutritionists, therapists, and sports coaches guide clients through personalized programs combining detox, fitness, yoga, relaxation, and physical preparation.

Everything is designed with a holistic rebalancing in mind. Diet becomes more balanced, in line with the chosen program, while still remaining festive; days are structured around wellness activities and targeted treatments, while the relationship with time gradually transforms. At Lily of the Valley, wellness doesn't seek demonstrative performance. It favors a more sustainable, quieter, more personal, almost introspective approach.

This philosophy probably explains why the hotel attracts both clients seeking regeneration and travelers accustomed to major international wellness destinations.

The rooms and suites naturally extend this feeling of tranquility. Opening onto the sea or the hills of Cap Lardier, they emphasize spaciousness, light, and warm materials. The Mediterranean influences envisioned by Philippe Starck are expressed through a subtle blend of wood, leather, rattan, handcrafted objects, and natural textures, creating an atmosphere that is both sophisticated and profoundly vibrant.

Led by the chief Vincent Maillard, the restoration, as in the Vista restaurantHe, too, contributes to this sensory immersion. Facing the Bay of Saint-Tropez, the chef celebrates a fresh and balanced gastronomic cuisine, in keeping with the wellness spirit of the place. Here again, luxury is not based on ostentation but on the feeling of fluidity: that of a stay where everything seems designed to care for the body as much as the mind.

Vincent Maillard's cuisine perfectly reflects the DNA of Lily of the Valley: a deeply Mediterranean gastronomy where well-being never sacrifices pleasure. Trained by iconic figures such as Alain Ducasse and Guy Savoy, the chef has developed an approach that is precise, elegant, and instinctive, built around absolute respect for the product and the rhythm of the seasons.

His cuisine draws directly from the Mediterranean terroir. Fish from the coast, vegetables from local market gardeners, fresh herbs, olive oils, citrus fruits, and seafood compose a luminous composition where each dish seeks above all the balance of flavors and the perfect harmony of textures. Vincent Maillard also maintains close ties with local producers, convinced that the quality of a cuisine begins with the authenticity of its ingredients. President of the association " The chefs celebrate the producers "In Saint Tropez, he is a fervent advocate of local, authentic, and regional products."

What truly distinguishes his culinary signature is his ability to reconcile gastronomy and wellness without ever falling into restrictive or demonstrative cuisine. In his kitchen, a langoustine, a scallop, or even caviar naturally find their place within a refined and contemporary vision of well-being. The dishes remain light, straightforward, and profoundly indulgent, enhanced by masterful cooking techniques, precise sauces, and an almost instinctive approach to flavor.

This philosophy gives rise to a vibrant, generous, and elegant cuisine, where one senses both the influence of great French gastronomy and the chef's deep connection to an authentic and serene Mediterranean. With each dish, Vincent Maillard seeks not only to nourish, but also to create a sensory experience consistent with the very spirit of Lily of the Valley, where luxury is defined above all by balance, naturalness, and emotion.

Below the hotel, the restaurant The Brigantine It unveils another facet of the Lily of the Valley universe: a strattoria with a rustic style, yet still imbued with the same understated elegance that characterizes the resort. Nestled almost at the water's edge, between golden sand, pine forest, and azure light, this beach restaurant seems suspended outside of time. Its expansive terrace overlooking the Mediterranean evokes more of a secluded Italian getaway than a bustling Riviera beach club.

La Brigantine celebrates a generous and refined Italian cuisine, conceived as a journey along the peninsula, from the northern lakes to Sicily. Colorful antipasti, homemade fresh pasta, delicate risottos, grilled fish, and desserts made on-site compose a Mediterranean symphony where the simplicity of the ingredients remains central.

What ultimately strikes you about Lily of the Valley is its ability to offer a different interpretation of the Riviera. Far from the spectacular, the bling, or the constant hustle and bustle often associated with Saint-Tropez, the hotel champions a more discreet, almost contemplative approach to luxury, focused on well-being.

Nature plays a central role here. The Cap Lardier estate, a Natura 2000 protected site, surrounds the property and reinforces this feeling of privileged seclusion overlooking the Mediterranean. Every sunrise, every outdoor yoga session, every walk between the pine trees and the sea becomes a unique sensory experience.

At Lily of the Valley, luxury is not measured solely by the level of service or the architecture. It resides in something rarer today: the ability to care for both body and mind.
