The third experience takes us on the paths of gourmandise. Maisons Hennessy and Hugo Desnoyer have joined forces for a new experience of pairing…a veal tartare from Corrèze by Hugo Desnoyer and Hennessy XO cognac.

This is Hugo Desnoyer's third collaboration with Maison Hennessy, offering a unique experience around the meat and Hennessy XO cognac pairing at his table in the 16th arrondissement.e arrondissement of Paris. Sharing the values of passing on know-how, the master artisan butcher likes to combine selected pieces with the creations of Renaud Fillioux, the master blender of Maison Hennessy.
Since mid-May, Hugo Desnoyer has been offering a new gourmet experience on the menu of his restaurant, the Pairing Meat Cognac (meat and cognac pairing): an intense flavor combination of two exceptional products, the quality of Corrèze veal tartare prepared with a knife, served with a glass of Hennessy XO acting as a gourmet highlight. Hennessy XO is intensely aromatic and perfectly echoes the texture, texture, and flavor of Hugo Desnoyer's veal tartare. Two products, two aromatic combinations that come together perfectly.
While the master butcher is a connoisseur of red meat, veal is a kind of object of study for him. Known for serving some of the finest veal in France, he enjoys working with it and then creating original variations, such as veal tartare, which remains one of his signature dishes.
With its subtle spicy and woody notes, Hennessy XO Cognac is the result of a rigorous selection of eaux-de-vie: deep and powerful, they are distinguished by their personality and their ability to balance each other. It is through this meticulous blending that we obtain this powerful, rich and exceptionally persistent cognac. Its amber color, mahogany highlights and tannin aromas suggest a deep and powerful character. On the nose and palate, it presents a candied sweetness, notes of spices, rich aromas of wild cocoa and a woody character. The permanence that emerges from it expresses all the complexity of its blend and its long-term aging.
This Meat and Cognac pairing is available only on the menu at Boucherie Restaurant Hugo Denoyer until November 15, 2023 at the price of 45 Euros (28 rue du Docteur Blanche 75016 Paris – 01 46 47 83 00 – Tuesday to Saturday for lunch and Thursday for dinner only). It comes from a blend of Pinot Noirs and Chardonnays, vinified in white with an addition of Pinot d'Aÿ made in red. The deep pink color is accentuated by the translucent bottle and powder pink packaging. This unique magnum has a clear color, lively and persistent bubbles, where we notice an elegant bead of foam.
This Premier Cru rosé has a frank and generous attack. It delivers long-lasting aromatic freshness. The nose is fresh and delicate, with a delicious, fruity finish. Light and delicate on the palate, with subtle notes of wild strawberry and flowers, revealing an elegant and well-balanced champagne. The finish is smooth and harmonious, with an extraordinary length.
This Premier Cru Brut Rosé is a pleasure to enjoy as an aperitif. Its beautiful Pinot structure and lively, vibrant character can be a real surprise when paired with grilled meats and fruit desserts.
The vintage is composed of 50% Chardonnays and 50% Pinot Noirs, the alcoholic fermentation is done in barrels for the Pinot Noirs and in temperature-controlled vats for the Chardonnays, the aging is 24 months, the dosage is 9g/l and the alcohol content 12°/vol. Its price… Magnum 150cl: 72,30 euros – 75cl bottle: 33,50 euros.
