OXTE, gastronomy with Mexican flavors

At Oxte, the owner and chef Enrique Casarrubias offers you a gastronomic map “Mexican style”, in a cozy bistro setting, with the warm colors of his native Mexico.

Open since 2018, the Oxte restaurant was awardeda Michelin star in 2021 and thus enters the closed circle of the gastronomy in France.

Please note that the establishment only has 28 seats, so it is best to book in advance.

The atmosphere is relaxed, overlooking the open kitchen where you can see the chef expertly finalizing each dish before serving it on terracotta plates and casseroles typical of Mexican craftsmanship. His explanations are concise and without embellishment, to better allow you to discover your plate...

Trained in the great establishments of France (Le Crillon, Georges V), it is also in his roots that he draws his inspiration to skillfully create a menu skillfully balanced with Mexican influences. The flavors of Latin America invite themselves to your table, subtle and spicy, tangy and sweet, a true exotic taste journey.

To delight your taste buds, the chef plays with his three favorite textures: spiciness, acidity, and bitterness, using ingredients popular in his country. More than 3 varieties of chili peppers are used in his recipes, yet you can enjoy every dish without missing a beat.

To whet your appetite:

A fresh starter with marinated sea bream accompanied by tomato, cucumber and a tangy pasilla pepper sauce

Steamed John Dory with Colonnata bacon and corn, prepared from A to Z (purée, mousse, leaf broth and grilled corn silk, etc.)

Pigeon escalope cooked in a clay pot, in the pure Mexican tradition on hot, melting pine cones with an inimitable aroma.

Trou Normand at Oxte: a mango sorbet spiced with Espelette pepper and a mezcal emulsion

For dessert: a light and melting spiced chocolate mousse with a hint of salt and chili pepper...

The soul of a restaurant is its chef. And beneath his somewhat "bear" exterior, Chef Casarrubias is a man of passion, tradition, and transmission. Oxte is also the union of the first two letters of his parents' native villages; it's a "family business" that he runs with his wife (who is also a chef); it's a cuisine made primarily with products from small producers, according to the seasons and arrivals...

When the chef is not cooking, he sometimes takes out his Harley Davidson 1200, see a movie with your favorite actor Will Smith "an actor with many roles" or relax to the music of Vicente Fernandez, famous singer of "rancheras" (songs of tormented love). As for French dishes, beef fillet with pepper sauce and St. Nectaire cheese are certainly his favorites...

France and Mexico therefore seem to be in perfect symbiosis in the cuisine and in the life of this starred chef with a strong character!
