New gastronomic menu for La Compagnie

La Compagnie is launching a new gourmet menu featuring a selection of organic wines curated by Bettane+Desseauve. The new season of "Chefs&Co" between Paris and New York has begun.

Since its inception, La Compagnie has collaborated with Christophe Langrée, former head chef at Matignon, to develop menus adapted to the four seasons. The menu is bold and refined, reflecting the Breton chef's style. Always looking for something new, La Compagnie and Christophe Langrée invite other renowned chefs to collaborate, offering specialties beyond the menu, for a month for each collaboration, as part of the "Chefs&Co" program created in 2017.

In September 2023, the two-star chef Stéphanie Le Quellec (left) joins the Chefs&Co family for a truly exceptional start to the new school year. She has identified with the values ​​of La Compagnie and its family spirit, which she herself conveys in her restaurant "La Scène", launching two signature dishes and a starter in September... marinated blue lobster, Tahitian vanilla, toasted buckwheat; and for the main course: coffee-confit veal shank, porcini mushroom ravioli.

Stéphanie Le Quellec also participated this Friday, September 1st, in a tasting and a meeting with the passengers of the La Compagnie flight to New York, accompanied by Joseph Desserprix, the dining room manager of his restaurant "La Scène" (recently in France), recently named Meilleur Ouvrier de France in the category "maître d'hôtel, service and table arts". The latter offered, during this event flight, a unique tasting of cheeses by the slice as well as seaweed and juniper condiments.

In November 2023, for the second consecutive year, the starred chef Nolwenn Corre (right) is launching a seafood menu that pays homage to his native Brittany, with a lobster galette as a starter and scallops, cauliflower with almonds and a juice reduction as the main course.

In December 2023, David Allain (left), a loyal two-star chef at La Compagnie since 2017, will offer a Vegetable Cannelloni with Celeriac as a starter, as well as a Ballotine of Cod and Salmon, Walnuts and Orange, and a Ballotine of Confit Lamb and Jerusalem Artichokes as a main course.

In March 2024, the starred Brazilian chef Franco Sampogna (right) from New York will launch its menu with the artist Richard Orlinski, consisting of a Grilled Vegetable Salad as a starter and two main courses: Truffle, Mushroom, Hazelnut Ravioli and a Poultry with Chanterelles Ras el Hanout.

In April and May 2024, the Marseille chef Frédéric Duca (left) former chef of Racines in New York and current owner of the Parisian restaurant "Rooster Batignolles", will present to welcome summer thick marinated salmon goujonnettes, Espelette and kumquat quenelles with peas and tarragon mayonnaise.

In July and August 2024, The pastry chef Yann Roofer (right), based in Miami, will surprise passengers with a new signature summer dessert.

100% organic wine list developed by Bettane+Desseauve experts

Wine selection requires knowledge and expertise. Since 2020, La Compagnie has collaborated with Bettane+Desseauve to develop a monthly updated wine list featuring wines that are 100% organic or in conversion. You can't enjoy a good meal without good wine. Organic wine is a new trend that's growing in the finest restaurants, and we would like to invite La Compagnie passengers to discover this new way of enjoying gastronomy at an altitude of 10 meters. ", says Thierry Desseauve, founder of Bettane+Desseauve.
