The vines are planted alongside Pinot Noir vines, giving them roundness, suppleness, and generous richness. With its delicate effervescence and a frank and elegant attack, it has a very subtle nose with aromas of brioche, cream, and hazelnut. 2008, a great vintage Edouard Brun
Le Champagne Vintage 2008 Edouard Brun is ideal as an aperitif, with profiteroles with foie gras... it announces a warm and sparkling evening, we toast to the start of New Year's Eve, we wish each other the best to come. The tasting continues throughout the meal. Without complex, it is perfect with poultry or sweetbreads and why not with a magnificent cheese platter (Saint-Nectaire, Comté, Mimolette Vieille, Brie, mature goat cheeses, etc.).

The 2008 Edouard Brun vintage reveals a golden color enlivened by a lively mousse. On the nose, we detect aromas of hazelnuts and almond paste followed by aromas of pear and quince on a lemony finish. On the palate, the tone is clean and persistent… lemony aromas and a great liveliness carried by a citrus side… the finish is very long, which increases the perception of the great Champagne wines. The House style is found in the tasting of this 2008 vintage… aromatic power of the Pinots and a note of liveliness with finesse of the Chardonnays.
The year 2008 was remarkable from a health perspective, the bunches were lighter and less tightly packed than usual and the harvest took place ideally... ventilated, dry and sunny during the day, cool at night, which facilitated the accumulation of sugar in the bunches.

Discovering old vintage champagnes
The “Champagnothèque” Edouard Brun reflects its expertise in the production of Champagne wines. The different vintages bear the characteristics of the year shown on the label. Indeed, the vineyards and the weather are observed with precision so that at the time of the harvest, we are able to determine whether the year will be suitable for the production of a vintage. Afterwards, analyses and tastings of the juices and then the clear wines must confirm or not this decision.

The Edouard Brun vintages are generally composed of 50% Pinot Noir and 50% Chardonnay. Bottling takes place the year following the harvest and the bottles remain on their lees deep in the cellars of the House for 10, 15, 20 years, or even more. They are opened six months before being marketed… expulsion of the sediment and application of a minimal dosage of liqueur (around 3g/liter).
These champagnes are generally powerful, vinous and very olfactory… signs of great champagnes that age harmoniously. Vintage 1996 Edouard Brun is one of those explosive wines where you experience even more the pleasure of waiting (24 years of aging)... a moment of voluptuousness to share between hedonistic amateurs, connoisseurs or with distinguished guests!
